The Weir is pleased to welcome Chef Lauri Hilli to the team. With 30 years’ experience, he brings expertise from the UK & Scandinavia. Chef Hilli has a passion for gastronomy and is dedicated to creating hearty food with a sophisticated edge – a perfect match for The Weir.
Chef Hilli’s career began in 1983 with an apprenticeship in the kitchen of the legendary Rendez-Vous in Stockholm. He launched Emma´s in London which quickly became known as the best Scandanavian restaurant in London. He launched 1619 in Gothenburg which was critically acclaimed to serve the “the best value for money” lunches in Sweden. In 2002, Lauri became head chef for VIA Restaurant in Helsinki, also developing the award-winning VIA ready-meal brand. He ran the legendary Tony´s Deli in Helsinki and worked to develop Svenska Klubben, Bakfickan Krog & Bar and Brändö Seglare before moving to England to launch Circa1924 Steak & Seafood House. He joins The Weir from his prior role at Karma Sanctum Hotel & Geales restaurants in Soho, London.
